Orange Cardamon Honey French Toast

Sometimes called pain perdu ('lost bread') or pain doré ('golden bread'), we simply call it French Toast.  This version will elevate your breakfast table with a splash of orange, kissed with cardamom.  Known as the Queen of Spices, cardamom is a warm spice with a strong aroma and flavour.  In Sweden and most Scandinavian countries, cardamom is very common in baked goods, such as cardamom buns. 

Ingredients

  • 4 eggs (farm fresh, if possible)
  • 1/2 c. half and half cream
  • 1/3 c. orange juice
  • 1 tsp. orange zest
  • 2 tsp. vanilla extract
  • 1/2 tsp cardamon, ground
  • 1/4 tsp. nutmeg, ground
  • 1/2 tsp. cinnamon, ground (Ceylon cinnamon recommended)
  • 1 Tbsp. Heritage Bee Co. CARDAMOM Honey
  • 8 Slices of day-old bread (we love using Challah !)
  • 2 Tbsp butter (grass-fed recommended)
  • Pinch of sea salt
  • Icing sugar for garnish

Method

  1. Beat eggs, cream, orange juice, Cardamom Honey, vanilla, spices and salt in a mixing bowl. Set aside.
  2. Melt butter in a pan over medium heat.
  3. Soak bread for 30-60 second in the mixture, turning to coat evenly.
  4. Pan fry the bread until golden brown.  About 3 minutes per side (depending on thickness of bread).
  5. Set aside each piece while the remaining ones are cooked.  Add more butter to pan,  if necessary.
  6. Serve immediately with your favourite toppings.    Dust with icing sugar.
  7. Bonus: Gently warm some local maple syrup with our Cardamom Honey in a small pot for an extra  delicious warm French Toast topping.
